Tortellini Sausage Soup

My mom made this soup last weekend when we had friends over to watch the basketball game. Some of you have asked for the recipe.

We originally got the recipe from our neighbor (the source of all things delicious) whose niece started this blog, where you can find many other delicious things. Perhaps you've already heard of it. These girls are kind of famous...

Tortellini Sausage Soup

3 links Italian sausage
4 cloves pressed garlic
1 onion, diced
½ c. water
2 cans chicken broth
½ c. apple cider (don't leave this out! I did once and it wasn't the same...)
1 16-oz. can diced tomatoes
1 8 oz. can tomato sauce
1 c. sliced carrots
1 tsp. dried basil
1 tsp. dried oregano
2 medium zucchini, grated (great way to use your food processor if you have one)
8-10 oz. package cheese tortellini (check the freezer section of your grocery store; if you can find it there, it will almost always be way cheaper than fresh tortellini. Also, Barilla makes a great dry cheese tortellini)
2 Tbsp. dried parsley (yes, that's two tablespoons)

If you're using link sausage, remove the casings and crumble into a large soup pot. To remove the casings, you can use a sharp knife to cut a slit down one side of the sausage and then peel back the casing.

Begin cooking sausage over medium heat, stirring frequently. If your sausage is pretty fatty, you'll want to drain it when it's about halfway cooked. Meanwhile, chop onions and garlic
and add to the sausage. Continue cooking until onions are translucent and your sausage is cooked. Your house will smell heavenly.

Add tomatoes, tomato sauce, juice, water, chicken broth, carrots, oregano, and basil. Cover and simmer for 1/2 hour. Add parsley and zucchini and simmer for another 15 minutes or so. Add the tortellini and cook until tender, and then serve with bread and freshly-grated Parmesan.

Chocolate Marshmallow Cookies


I made these cookies for a shower on Saturday.
Anything chocolate and marshmallow--sign me up.

Makes about 2 dozen

  • 1 3/4 cups all-purpose flour
  • 3/4 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup sugar
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon pure vanilla extract
  • 12 large marshmallows, cut in half horizontally
  1. Preheat oven to 375 degrees. In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt; set aside.
  2. In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugar until light and fluffy, about 2 minutes. Add egg, milk, and vanilla, and beat until well combined. Add reserved flour mixture; mix on low speed until combined.
  3. Using a tablespoon or 1 3/4-inch ice cream scoop, drop dough onto ungreased baking sheets, about 2 inches apart. Bake until cookies begin to spread and become firm, 10 to 12 minutes.
  4. Remove baking sheets from oven, and place a marshmallow, cut-side down, in the center of each cookie, pressing down slightly. Return to oven, and continue baking until marshmallows begins to melt, 2 to 2 1/2 minutes. Transfer cookies to a wire rack to cool completely before frosting.
  5. Spread about 1 tablespoon of frosting over each marshmallow, starting in the center and continuing outward until marshmallow is covered.

Who hath desired the sea?*



after a family gathering tonight, we're headed to stay
in a shingled house by the sea.


there's a cozy spot quite like this one in the main part of the house. Upon the sight of it,
I dubbed it as my sleeping quarters and my daytime lounging spot.
it's perfect for reading and looking out at the ocean.

we're each in charge of a meal and a day's worth of activities.
so far i've found four killer cookie recipes and
a list of local design shops.
chocolate marshmallow cookies and sea salt caramel brownies count
as a main dish. especially on vacation.
i pulled out the travel folder from my work files
and am excited to peruse the local design scene, albeit possibly solo.
i've looked up bookshops, too.
more will be in tow on those outings, perhaps.

mostly, i'm excited for sea and sand and uninterrupted time with family.
